A SANDILANDS store has been given the green light to transform itself into a modern bistro by the end of the year.
Mellendene Stores on Sea Lane will convert half its current building to a spacious eatery showcasing fresh produce after receiving council approval.
It will be known as the ‘Fat Seagull’ akin to TV chef Heston Blumenthal’s world renowned ‘Fat Duck’ in Berkshire but will continue to supply locals with their daily bread and milk.
They will open each daytime for deli lunches and on Friday and Saturday evenings where customers can bring their own wine and enjoy the new menu.
The couple took over the store in December 2009 and were hit hard by the closure of the post office just days later as the the recession took hold. Now they plan to go back to what they know after running a number of successful food outlets in the past.
Co-owner Catherine said: “We’re really excited about it, we come from a catering background and we’ve come full circle after running the shop. Our chefs have a lot of pedigree and are keen to keen to showcase our fresh hand cooked food.”
